My last tropical vacation was 7 years ago, when I got married in Antigua. That was the only tropical vacation I've ever been on, come to think of it.
And with two small children, I have no idea when we'll have the opportunity to take one again. So, on those nights after a brutal day, I have to pretend that I'm on vacation. I close my eyes and remember those long, leisurely, worry-free days.
These Caribbean martinis certainly help with that!
What you'll need
- 1-1/2 ounces Absolut Mango vodka
- 3/4 ounce Malibu® coconut rum
- 1 splash pineapple juice*
- Fresh pineapple chunks
*If you're like me and can't get through an entire bottle of pineapple juice before it goes bad, pour the remaining juice into ice cube trays, freeze and transfer to a freezer bag for future martinis.
For the best martinis, set yourself up for success by placing your vodka, rum, shaker and martini glass in the freezer several hours before mixing your drink. Don't worry, alcohol won't freeze in your freezer.
Fill your martini shaker with ice. Add all of the ingredients to the shaker and shake vigorously until well blended.
Pour into a chilled martini glass and garnish it with a fresh chunk of pineapple.
If your martini glass doesn't hold the entire drink, you need new glasses.
Or you could put the martini shaker back in the freezer for a refill later.
