Many of us need more vegetables in our diets. One way to easily accomplish this is by drinking fresh vegetable juices. They are easy to make with the help of a juicing machine and provide many health benefits.

Beet juice

Serves 2

Beets come in a variety of beautiful colors ranging from red to golden. They can be used in everything from beet juices to chocolate cakes and food colorings. Both the root and greens are edible on the beet plant. The roots are full of vitamin A, vitamin C, potassium and betaine. Beet greens contain vitamin A, vitamin K and lutein. They have antioxidant and anti-inflammatory benefits for the body as well as help clean the liver, kidneys and gallbladder. Since they are available all year long, you can enjoy this beet juice any time you want!

Ingredients:

  • 3 red beets, tops intact
  • 1 apple
  • 1 pear
  • 1/4- to 1/2-inch piece of ginger

Directions:

  1. Juice all ingredients in a juicing machine.
  2. Pour into a glass, add ice and enjoy!

  • 1 spear broccoli
  • 1/2 cucumber
  • 1 apple
  • 1/2 cup parsley
  • Squeeze of lemon

Directions:

  1. Juice broccoli, cucumber, apple and parsley in a juicing machine.
  2. Pour into a glass with ice.
  3. Squeeze in lemon juice to taste and enjoy!
